The menu was structured with wines from the Quintessenz line\nof the Kaltern winery.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This winery is a historic cooperative that brings together the winemakers\nof the municipality of Caldaro, wines produced in the area surrounding Lake\nCaldaro. Present at this lunch were the oenologist Thomas Scarizuola and the\nsales director Martin Klammer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We started lunch with their rather pleasant brut Nature 2017 with a\nlemon and mint flavor with &#8220;beetroot, almonds and bay leaves. We were\nserved the Quintessenz Pinot bianco 2020 with mineral and sweet notes on the\nnose that reminded me of the ricciarello. The Quintessenz Sauvignon blanc 2020\nwas paired with the &#8220;Fitch fillet of the day with fennel, clam and iodized\nsauce&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The dish &#8220;Agnolotti of Livorno cockerel with a touch of Parmigiano\nReggiano&#8221; was combined with the Quintessenz Kalterersee Classico Superiore\n2021.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">the following dish was: &#8220;Beef fillet in a crust stuffed with livers\nand Tuscan ham, black truffle and vin santo sauce&#8221; which was paired with\nthe Quintessenz Cabernet Sauvignon reserve 2019 wine which had woody notes but\nalso pleasant fruity plum flavours, blueberry and cassis.<br>\nThe last course was the &#8220;Creamy with blue, medlar and buckwheat&#8221;\npaired with Quintessenz Passito 2017.<br>\nThis, in my opinion, was the most successful food-wine pairing.<br>\nWe now come to describe the wines tasted.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As regards the width of the tannin, it is important\nthat you make the following clarifications, so that it can be understood. I\nfeel the tannin of the wine on the upper gum. The total width of the tannin is\n6\/6, i.e. the entire width of the upper gum. Obviously, if the tannin is less\nwide, it could be for example 5\/6 and so on. The width of the tannin is\nimportant when the quality of the same is of a good or high level. If the\ntannin is wider, the wine is more worthy of attention, but the tannin, as I\nspecified, must in any case be of good quality.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let us now describe the wines tasted.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>KALTERN BRUT NATURE<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sudtirol Alto Adige D.O.C., vintage 2017<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>(grapes: Chardonnay e Pinot\nNero vinificato in bianco)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Light and shiny golden yellow appearance.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The bubbles are quite fine and quite numerous.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">From the glass rise aromas of warm, freshly baked\nbread, sweets from the outside of the candy, hints of cognac, pine resin, fresh\ncelery, fresh fennel, hints of white melon, amber to finish with<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">intense mint tones that recall that of the &#8220;after eight&#8221; chocolate.       <strong>(88\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>KALTERN <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>QUINTESSENZ Pinot bianco\nD.O.C., vintage 2020<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bright straw yellow colour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On the nose, aromas of mandarin, amber, light\nwoody, graphite, floral, rust emerge, ending with a sweet note that reminds me\nof Ricciarello.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Savory taste and tangerine flavour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The body is medium and not particularly\nstructured. Wine with a little bit of alcohol pungency on the tongue and upper\ngum. Its taste persistence is quite long.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In my opinion it lacks a bit of structure and taste persistence. <strong>(88\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>KALTERN <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>QUINTESSENZ Sauvignon blanc\nD.O.C., vintage 2020<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Straw yellow.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Olfactory mix made of aromas of rue leaf, tomato\nleaf, jasmine, mint, eucalyptus, light bois\u00e9, flint, light exotic fruit (mango\nand papaya) and iodine in the finish.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The taste reveals salt, lemon and lime. The body\nis medium and the wine is quite balanced. I perceive a slight swing between\nalcohol and freshness.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The tongue in the central part and the upper gum\nfeel a little burning. Stopping the wine in the bottle will make the wine more\nbalanced.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Its taste persistence is quite long.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wine rich in minerality.&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;                                               <strong>(88\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>KALTERN <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>QUINTESSENZ Kalterer se\u00e9\nClassico Superiore D.O.C., vintage 2021<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>(grapes:\n100% Schiava)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aromas of medicine drawer, red apple, red roses, Coccoina glue (coconut\nand almond milk), helichrysum (licorice, mint and chamomile) to finish with\nbois\u00e9 notes reminiscent of episperm (the second skin of boiled brown).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The body is medium sufficient plus and the wine has, at this moment, a slightly fluctuating balance between alcohol and freshness. The tannins are quite broad (5\/6&#8211;), sweet, initially velvety and then burn the upper gum a little. Its intense aromatic persistence is long.              &nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <strong>(89\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>KALTERN <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>QUINTESSENZ\nCabernet Sauvignon D.O.C., vintage 2019M<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix of ruby red and purple.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The olfactory encounter highlights aromas of\nblond Virginia tobacco, bois\u00e9 which I identify in the &#8220;After eight&#8221;\nchocolate (mint and chocolate), plum, cassis and blueberry.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On the palate the bois\u00e9 note is quite marked.\nThe body is medium plus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Flavors of plum, blueberry, cassis and bois\u00e9.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Slightly fluctuating taste balance between\nalcohol and freshness. The tannins are sweet, quite broad (5\/6++) initially\nvelvety and then dry and slightly burn the upper gum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Its taste persistence is long with a woody\nfinish of After eight.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It&#8217;s a shame that the wine has this excessive\nwoodiness for me.<strong>(90\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>KALTERN <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>QUINTESSENZ Passito D.O.C., vintage 2017<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>(grapes: 100% Moscato\ngiallo)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">production 4000 bottles, use of Tonneaux and barriques<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It shines intense golden yellow and amber.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aromas of muscat, honey, chamomile, light caramel and dried apricot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The body is medium and has a honey and dried apricot flavour. The wine\nhas a slightly fluctuating balance between alcohol and freshness.
