Allison and Tasuku Honjo for\nmedicine and considered the &#8220;fourth weapon&#8221; in the fight against\ntumors.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Prof. Maio is director of the CIO, Immunology\nCenter at the Siena University Hospital and Full Professor of Medical Oncology\nat the University of Siena. www.fondazionenibit.org &#8211; email:\nsegreteria@fondazionenibit.org.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The dinner was curated by Chef Nicoletta\nMarighella who once again demonstrated her ability to cook an excellent meat\nmenu with absolute skill.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The restaurant is known as a great fish\nrestaurant but I have to say that this dinner based on meat ingredients was\nimpeccable.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At the aperitif we were served excellent cold\ncuts and polenta with woodcock combined with a sparkling wine from the Case\nCoste Piane company which was pleasant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The menu was as follows:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8220;Ravioli with braised meat and roast\nsauce&#8221;; &#8220;Parmesan risotto with wood pigeon rag\u00f9&#8221;, &#8220;Braised\nveal cheek with saut\u00e9ed chard&#8221;, finishing with cream ice cream with black\ncherry in syrup.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Just writing down the menu made my mouth water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The dinner was accompanied by a regal wine,\nSangiovese Toscana PGI from Gianfranco Soldera&#8217;s Case Basse company, 2013 vintage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I was at the table with Prof. Maio and the\nSoldera family, his wife Graziella, his daughter Monica with her husband Paolo\nand at our table there were Gianfranco&#8217;s glasses, strictly lead-free.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The Soldera family generously offered two\n5-liter and two 3-liter bottles for dinner. What an exceptional wine! what a\npleasure to drink it. Gianfranco has always done charity work, he has always\nbeen a generous man and Monica has followed in his footsteps. The wines during\ndinner were served by excellent sommeliers.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After this fantastic dinner there was a short\ncharity auction of wines offered by producer and non-producer friends. The\nauction was won by the undersigned with the help of Gaetano.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let&#8217;s now move on to describe the wine tasted\nand drunk during dinner.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Case Basse <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Gianfranco Soldera Sangiovese Toscana PGI, 2013\nvintage.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Transparent garnet red.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Intense and varied aromas of black pepper,\nnutmeg and light cloves rise from the glass. Followed by notes of cherry, mint,\neucalyptus, bergamot, graphite, dog rose, lemongrass, currant, sweets from the\noutside of the dragee, blood orange, broken cyclamen stem, gunpowder, starch\n(spary starch for ironing), slight hints of leather of tannery at the end of\nprocessing, small grains of liquorice, rosemary, sage, bay leaf, thyme, green\npepper, tow, wild strawberries, India ink, medicinal herbs, to finish with\npuffs of peeled tomatoes. On the palate the wine is perfectly balanced between\nalcohol and freshness. The tannins are completely broad (6\/6), sweet,\ninitially, silky and then become slightly rough in the finish. The body is\nmedium perfect.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Its taste persistence is long with a finish of dog rose, medicinal herbs, wild strawberry and a chinotto finish.&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; &nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <strong>(98\/100)<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>At the end of January, a benefit dinner was held at the &#8220;Il Mestolo&#8221; restaurant in Siena in favor of the Nibit Onlus Foundation, chaired by Prof. Michele Maio.
