{"id":15009,"date":"2025-01-03T12:28:03","date_gmt":"2025-01-03T11:28:03","guid":{"rendered":"https:\/\/www.paolobaracchino.com\/?p=15009"},"modified":"2025-01-03T12:28:05","modified_gmt":"2025-01-03T11:28:05","slug":"%ef%bb%bfa-small-table-of-1200-people","status":"publish","type":"post","link":"https:\/\/www.paolobaracchino.com\/en\/uncategorized\/%ef%bb%bfa-small-table-of-1200-people\/","title":{"rendered":"\ufeffA &#8220;SMALL TABLE OF 1200 PEOPLE&#8221;"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">At the beginning of\nSeptember, a day of meetings with companies belonging to the Bolgheri\nConsortium was held in Bolgheri by customers and national and international\njournalists.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The day then culminated\nwith a dinner which took place on the Bolgheri avenue with 1200 guests.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I had the pleasure of participating in this\nparticular event as I was invited by Dr. Federico Zileri Conte dal Verme degli\nObbizi, owner of the Bolgheri company &#8220;Castello di Bolgheri&#8221;. In\nmid-afternoon I arrived with my wife Sara at the company where there were other\nguests, friends, customers, restaurateurs and producers of other wines of other\ndenominations. Federico gave us a tour of his cellar and then asked me to\nconduct a tasting of his wines: Varvara 2021 and 2022, Castello di Bolgheri\n2020, 2021 and 2022 and the new Barinca 2021 wine, all Cabernet Franc which\nwill be released on the market in 2025.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For me it was certainly a great pleasure to hold\nthis tasting also because I found people who were very interested in listening.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At the end of the tasting we went to Viale di\nBolgheri to our table.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The catering was by Guido Guidi, from Florence,\nand was impeccable for the quality of the food and service.&nbsp; In practice, dinner was served in an hour and\ntwenty minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The wine was served by numerous sommeliers who\nhad a station with many wines for every 80 or so diners.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">All the producers of the Bolgheri wine\nconsortium, municipal, regional and state political figures, both Italian and\nforeign journalists and customers of the various companies were present at the\ndinner.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Before moving on to the tasting notes of the\nwines.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I have to make some\nclarifications about the tannins in wine. I feel the tannin of the wine on the\nupper gum. The total width of the tannin is 6\/6, i.e. the entire width of the\nupper gum. Obviously, if the tannin is less broad, it could be for example 5\/6\nand so on. The width of the tannin is important when the quality of the tannin\nis of good or high level. The larger the tannin, the more worthy of attention\nthe wine is, but the tannin, as I have specified, must, in any case, be of good\nquality. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let&#8217;s now move on to\ndescribing the wines tasted.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BOLGHERI CASTLE<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>VARVARA BOLGHERI red D.O.C., 2021 vintage<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>(grape\nvariety: 60% Cabernet Sauvignon, 28% Merlot and 12% Cabernet Franc)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A beautiful purple red emerges from the glass.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Rich, varied and pleasant nose, aromas of wild\nstrawberry, raspberry, damp earth, fleshy black morello cherry, black olive,\nparaffin, mint, eucalyptus, broken cyclamen stem, Coccoina glue (coconut and\nalmond milk), very light green pepper, sage, rice starch, peeled tomatoes,\nfresh leather, capers, anchovy, plum, finishing with puffs of blond tobacco of\nVirginia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On the palate it has a medium-light plus body\nand is savory, mineral and has a richly juicy plum flavour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Well balanced wine with rich freshness and\nminerality which make the alcoholic mass completely harmless.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The tannins are sweet, thick enough (5\/6) and\nvelvety.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Its flavor persistence is long with a fresh, juicy plum finish. <strong>(93\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BOLGHERI CASTLE<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>VARVARA BOLGHERI red D.O.C., 2022 vintage<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>(grape variety: 60% Cabernet Sauvignon, 28%\nMerlot and 12% Cabernet Franc)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It has a fairly transparent\npurple-red appearance.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Smell characterized by aromas of cherry, black\npepper, intense nutmeg, mint, eucalyptus, rosemary flower, sage, fir, fresh\nplum, damp earth, rust and jute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pleasant mouth characterized by the flavor of\nplum, ripe blackberries and red blackberries.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The body is medium sufficient and the wine has a\ngood balance between alcohol and freshness which must be improved with the rest\nof the wine in the bottle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The tannins are sweet, broad (6\/6), thick and\nsilky.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Its taste persistence is long with a fresh plum\nfinish.&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <strong>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;(92\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BOLGHERI CASTLE <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BOLGHERI SUPERIORE red D.O.C, 2020 vintage<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>(grape variety: 75% Cabernet Sauvignon, 12%\nCabernet Franc and 13% Merlot)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Purple red robe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The sense of smell reveals aromas of red rose,\nmint, eucalyptus, nutmeg, moist earth, pink cherry, episperm woody (it is the\nsweetness of the skin of boiled chestnut), rosemary, sage, bay leaves, hints of\n&#8220;after eight&#8221; chocolate ( intense mint and chocolate), fabric soaked\nin wine, starch (starch spray for ironing) to finish with caresses of Coccoina\nglue (coconut milk and almond).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Plum flavored bite. The body is medium\nsufficient plus, the alcohol-freshness axis is in perfect balance thanks to the\ngenerous presence of the latter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The tannins are sweet, quite broad (5\/6+) and velvety. Its flavor persistence is long with a squeezed plum finish. <strong>                                                           (94\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BOLGHERI CASTLE <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BOLGHERI SUPERIORE red D.O.C, 2021 vintage<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>(grape variety: 80% Cabernet Sauvignon, 15%\nCabernet Franc and 5% Merlot)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Purple-red coat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bouquet made of scents of damp earth, tow, red\nrose, Coccoina glue (coconut and almond milk), graphite, mint, eucalyptus,\nalmond shell, blueberry, cherry to finish with pinches of green pepper.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Upon tasting, it has a medium body, sufficient\nplus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nice drink with a black berry fruit flavour.\nWell balanced wine thanks to the freshness that completely envelops the\nalcoholic mass.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The tannins are sweet, broad (6\/6&#8211;), thick and\nsilky.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Its intense aromatic persistence is long with a\nplum and blueberry finish.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fine wine, delicate not in power but in elegance.&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; &nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <strong>(95\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BOLGHERI CASTLE <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BOLGHERI SUPERIORE red D.O.C, 2022 vintage<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>(grape variety: 75% Cabernet Sauvignon, 20%\nCabernet Franc and 5% Merlot)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Purple red dress.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The olfactory treasure chest opens to aromas of\nfresh plum juice, blueberry, blackberry cassis, red apple, damp earth, mint,\neucalyptus, rosemary flower, graphite, ice cream cone wafers, broken cyclamen\nstem, wild sex, black olive , sharp pencil and light woody tones of episperm\n(it is the sweetness of boiled brown skin).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When tasted, it is savoury, has a plum and\ncherry flavour, and has a sufficient medium plus body. Wine well balanced\nbetween alcohol and freshness, the latter completely covers the alcoholic mass.\nThe tannins are sweet, quite broad (5\/6++) and velvety.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Its flavor persistence is long with a plum finish.&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; &nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <strong>(94\/100)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BOLGHERI CASTLE<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>BARINCA, vintage 2021<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>(grape variety: 100% Cabernet Franc)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Intense purple-red &#8211; black\nappearance.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Olfactory prelude of aromas of rosemary flower,\nmint, eucalyptus, hints of green pepper, black truffle, boiled chestnut with\ndried wild fennel, sweets from the outside of the dragee, natural tea, graphite\nto finish with whispers of nutmeg.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fine and elegant wine with medium body.&nbsp; Alcohol and freshness are in perfect balance with each other. The tannins are sweet and quite broad (5\/6++), initially velvety and then dry the upper gum a little.
